Welcome to Proof, a wine-centric restaurant serving Modern American cuisine in the heart of Washington, DC. The casual, elegant feel to this Penn Quarter destination is reflected throughout Chef Haidar Karoums menu. Proof showcases the best local, organic and sustainable ingredients in clean, beautiful, preparations, as well as an extensive international selection of cheese and charcuterie.

The wine program pays homage to the old world as well as the new, with an extensive selection of Rhone varietals and Bordeaux classics offered alongside a comprehensive collection of California "cult" Cabernets and Australian reds. Proof's extensive wines by the glass program includes 16 whites and 16 reds dispensed by a stunning, stainless steel Enomatic machine from Italy, and a Champagne trolley that provides tableside access to several chilled by-the-glass sparkling wines each night.

The space, designed by Grizform Design, also blends old world charm and modern panache, as exposed brick walls, a custom French pewter bar, Jerusalem stone, and antique Chinese chests mingle seamlessly with wide-plank walnut floors, Bisazza tiled bathrooms, Italian leather seating and European lighting fixtures. In a nod to its neighbor, the National Portrait Gallery and Smithsonian American Art Museum, Proof rotates hundreds of images from the museum's collection on four flat-screen plasma monitors positioned above the bar.
